Although not a single-vineyard wine like Camino Novo and Seoane, Rosende comes from a particular granite slope with a percentage of sand that is reminiscent of vineyards in the Northern Rhône and Cornas. The vineyards are between 28 and 60 years old, complex in varietal composition, but the majority are Mencia. The grapes are vinified in a large concrete tank and open barrels with whole bunches at 100% and after a prolonged maceration of 35 days are pressed in a vertical old press. They will remain in a combination of 228l. old barrels and a 2,000 lt. old foudre. The winemaking is completely non-intrusive, old school with only a very small percentage of sulphites added before bottling the wine and only at this stage.
