Sauvignon Blanc Nature comes from one of the most mountainous vineyards of this variety in Greece, planted at an altitude of 1,050 meters. As a variety that loves the cold climate, it finds ideal conditions to fully express itself in such a place. In this terroir, the aromas do not have time to burn, the alcohol remains low, and the acidity in the mouth is explosive, leading to intensity and balance in the flavor profile. This is one of the most exciting Sauvignon Blancs from the Greek vineyard, elegant—even austere—aromatically with herbal notes and lemon freshness, while the minerality is reminiscent of flint. The lively acidity balances the layers of complexity from the barrel and the creamy texture, providing the necessary freshness. An acidity that sweeps everything in its path and clearly recalls the altitude of 1,050 m and the unique identity of this mountainous Sauvignon Blanc. Sauvignon Blanc Nature comes from 8 acres of vineyards at an altitude of 1,050 m, with 20-year-old vines planted in a cup-shaped formation. Spontaneous fermentation at low temperature and six months of aging in 1,500 L French foudre barrels lend deeper complexity and texture, seeking to balance the explosive acidity that sweeps across the palate. At every moment, it reminds us of the altitude and authenticity of the terroir, creating a lively wine, almost austere aromatically, especially when very young. It is bottled unfiltered, without fining and with low sulphites. An oily smoked fish, such as smoked eel, will take the combination to new heights. But with its acidity and character, it is perfectly gastronomic, ideal for accompanying a variety of different choices.
