The wines of the experimental vinifications of the Vouni Panagia winery with labels that are works of art in themselves are not only rare and exceptional. They also show the need for Cyprus' producers to seek, taste and get to know the island's viticultural treasures themselves. The label "Woman in the Wine Press" is an attempt to revive the Morocanella variety. A ripe wine with notes of stone fruit, lemon juice with honey and ginger, mildly oxidative character. The freshness of the acidity and the fine energy the wine has on the palate help to "compose" a truly exceptional story. Rarity, uniqueness, particularity are the words that characterize this excellent example of the endemic Cypriot variety.

The process starts with de-stemming and without breaking the rails, followed by extraction at mild temperatures for 4 days. Fermentation is spontaneous and takes place in stainless steel tanks with simultaneous extraction. At the end of fermentation, the wine is matured in 3rd use French oak barrels with a capacity of 300 litres for a period of up to 3 months. This is followed by reduction ageing for 6 months in bottle before being released on the market.
