Based on the Mavrodaphne grape, Evriviadis Sklavos continues his experimentation with the variety, creating a rare and distinctive wine that goes well beyond its traditional use. His new rosé is made from 100% organically grown Mavrodaphne, cultivated in the clay-limestone soils of the region. This is a rosé that is anything but neutral or characterless. It stands out with its forest fruit aromas, its deep color—especially for a rosé—and its pronounced phenolic character on the finish. It’s like biting into the peel of a pink grapefruit. A gastronomic rosé, ideal for pairing with Mediterranean cuisine, and—true to the Sklavos philosophy—it confidently steps outside the conventional.

The rosé bio is vinified in stainless steel tanks using indigenous yeasts, following the gentle, natural winemaking approach that Sklavos applies to all his wines. Interventions are minimal, and total sulphur levels are kept low—just 50ppm. This alternative interpretation of the Mavrodaphne variety results in a rosé with refreshing acidity, a fairly rich body, and a slightly bitter, gastronomic edge on the palate—something not uncommon in wines made from this grape. Mavrodaphne reveals its multifaceted character in a wine that doesn’t follow fleeting trends but instead relies on its own distinctive personality and food-friendly nature.
