A rosé wine from the Garakis family's mountain vineyard in Arkadi, at an altitude of 600 meters—the same vineyard that produces the winery's red Mantilari. The result is a rosé with a deeper color, structure, and intense gastronomic character. The nose is relatively restrained – almost "austere" – but the palate reveals juicy red fruit, which perfectly balances the high acidity of the variety. This is not a rosé for the pool — it is one you will prefer at the table, accompanying food and cleansing the palate with its energy and acidity. From the next harvest onwards, it will be enhanced with Kotsifali, giving it a new, different profile, combining the two classic red varieties of Peza.

The rosé wine produced by the Garakis winery comes from the same grapes used to make the family's red Mantilari wine. Twelve hours after the grapes are crushed, part of the must is bled off to produce the rosé, while at the same time enhancing the concentration of the red. Fermentation takes place in stainless steel tanks under controlled temperatures, and the wine remains in contact with the fine lees for 5 months, with periodic stirring, for more structure and energy in the mouth. The final profile is crisp and clean, with high acidity, intense fruit on the palate, and a gastronomic dimension. Think of pairing it with Cretan pies with greens and herbs, or seafood and stuffed squid with tomato and feta cheese. And, of course, Cretan gruyere.
