Salò is our own perspective on dry Mavrodaphne — a wine that carries all the qualities we seek and want to find in the wines we drink, but above all, share with you. Its label, inspired by Pasolini’s infamous and banned film and designed by Panos Chaviaras, challenges the conventional image of the variety as we know it through its appellations. Salò is a raw expression of the variety’s unique fruit, aiming for immediacy. It is made from organically grown grapes from ungrafted vines, cultivated in the historic vineyards of Vatsa on the Paliki peninsula in Kefalonia. The wine sees no oak at all. This Mavrodaphne has the fruit-forward immediacy of a maceration carbonique, combined with the variety’s authentic aromatics in the glass: wild berries, red fruits, herbal notes, gentle noble tannins, and refreshing acidity. An anarchic expression of the variety.

Organically grown grapes from ungrafted vines of exceptional quality were the starting point. After destemming, they remained with the skins for one week in egg-shaped concrete tanks. Following gentle pressing at low pressure, fermentation was completed in the same concrete tanks, where the wine stayed in contact with the lees until bottling. Delightful, fresh, immediate, and vibrant — ideally enjoyed slightly chilled to capture all of its energy in the glass.
