In Jura, tradition is not limited to oxidative white wines. Elegant, ethereal red wines are also part of the tradition, counterbalancing an earlier era when "big," overconcentrated, and over-extracted red wines were synonymous with quality. The truth is that this is not exactly a philosophical debate, but rather the potential of the Jura terroir and local varieties such as Trousseau and Poylsard. Elegance is their hallmark. Trousseau is a variety with deep roots in the region and is a "model" for lighter, fresher, and cooler wines. Singulier perfectly reflects the region's ability to produce wines with depth of flavor but a light character. Ripe, bright cherry fruit, bittersweet, with notes of spice and soft, ripe tannins in a moderately full-bodied, elegant wine.

Singulier comes from different vineyards cultivated biodynamically, like all Tissot vineyards, mainly on clay soils with limestone subsoil and using traditional natural methods. The grapes are carefully destemmed by hand; two-thirds are macerated for about a month in wooden conical tanks with regular pigeage, while the remaining third remains for three months in large foudres, developing deeper complexity. The wine is then aged for 12 months in demi-muids (600 liters), with a small percentage of new barrels, and bottled with minimal addition of sulfites. The nose reveals aromas of red cherry, plum, pepper, and subtle earthy notes. On the palate, it is soft, with extremely fine tannins, liveliness, and elegance that define its character. The finish is unexpectedly long for its relatively light style.
