When the French spoke decades ago about the rosés of Arbois, they were essentially describing the region's light red wines made from local varieties such as Poulsard. And Stephane Tissot's Poulsard Vieilles Vignes is a journey through the Jura via ethereal reds that contrast with a previous era obsessed with richness and extraction of reds. From 60-year-old vines on Liassic and Triassic clay, Poulsard is a soft-colored, light, fresh wine, with perhaps a little more nervousness and elegant notes of red fruit and herbaceousness than Trousseau, which tends to present slightly more ripe fruit and a more exuberant flavor. Red fruits, notes of smoke and spices, with delicate tannins and refreshing acidity, make it an ideal companion even for grilled fish. A delightfully distinctive but fully expressive example of Jura.

Poulsard Vieilles Vignes comes from 60-year-old vines grown on clay soils in the Jura region, using organic and biodynamic farming methods. The harvest is done manually and extraction lasts 1–3 months in traditional foudres, depending on the year. The wine is lightly sulphured after the end of the extraction period and aged for 6 months in foudres. The wine is characterised by its purity of expression, with intense red fruit, spices and smoky notes. On the palate, the tannins are delicate and refined, the acidity balanced, with a velvety texture and moderate body. If you manage to resist its character, it can age for 6-7 years.
