Lamda from the Ligas Winery is an expressive skin-contact Assyrtiko with exceptional depth, complexity, and texture, without losing the variety’s characteristic freshness and mineral character. Aromas of orange, candied apricot, and nuts open up in the glass, while on the palate there are hints of tannins and a mild astringency in a wine that is, however, enveloped by acidity. The Ligas family’s approach involves zero intervention, biodynamics/permaculture, and zero use of sulfur, and the wine is an authentic, honest expression of the noble variety through a completely traditional vinification process in contact with the skins.

Lamda Assyrtiko is produced from 16-year-old vines planted in limestone and clay soils at an altitude of 100 meters, facing north-south, on 1.8-meter-high trellises. Harvesting is done by hand, and fermentation begins with skin contact for 7 days in stainless steel tanks at 16–18°C. The final must is transferred to a stainless steel tank to complete fermentation at 20°C and remains on the fine lees for 6 months before bottling, without filtration, fining, or the addition of sulfur dioxide.
