Sauvage Bleu is a red wine made from 100% Limniona grapes, sourced from 12-year-old vines growing at an altitude of 300 meters in Pella, with a north–south orientation and cultivated organically using permaculture principles. The harvest is done by hand, and fermentation takes place with indigenous yeasts, involving a very gentle maceration of whole clusters for 7 days. The fermented must is then transferred to stainless steel tanks and oak barrels to complete fermentation and ages for about 6 months in oak before being bottled unfiltered and without the addition of sulfites. In the glass, it exhibits a medium to full body, intense acidity, and moderate tannins, with an aromatic profile that combines red and black forest fruits, leather, and notes of black tea. Its slightly oxidative character adds complexity and depth. A limited-production wine from exceptional vintages, crafted with a zero-intervention philosophy.
