Liga Sauvage Bleu

31,60 €

Sauvage Bleu is a “wilder” and more authentic version of Limniona, a wine that strikes a balance between elegance and untamed energy. Raspberries, pomegranate, and plum intertwine with dried herbs and leather. There is a slight “funky” dimension, but it works in favor of the complexity, adding more character. On the palate, it is lively and expressive, with crisp acidity that keeps the wine fresh and balanced, while the tannins are present. The oxidative touch adds depth and complexity, without detracting from its immediacy and enjoyability. A wine that doesn’t try to impress with power, but wins you over with its energy and personality—rare, limited production, and only in exceptional vintages.

More info

Sauvage Bleu is a red wine made from 100% Limniona grapes, sourced from 12-year-old vines growing at an altitude of 300 meters in Pella, with a north–south orientation and cultivated organically using permaculture principles. The harvest is done by hand, and fermentation takes place with indigenous yeasts, involving a very gentle maceration of whole clusters for 7 days. The fermented must is then transferred to stainless steel tanks and oak barrels to complete fermentation and ages for about 6 months in oak before being bottled unfiltered and without the addition of sulfites. In the glass, it exhibits a medium to full body, intense acidity, and moderate tannins, with an aromatic profile that combines red and black forest fruits, leather, and notes of black tea. Its slightly oxidative character adds complexity and depth. A limited-production wine from exceptional vintages, crafted with a zero-intervention philosophy.

Penetrating tensions with beautiful oxidation supported by notes of citrus peel and candied lemon. Give it time to open up and it will throw a party of aromas with saffron and curry, tobacco leaves, nuts such as walnuts and roasted almonds, and earthy notes of truffle. Full of umami on the palate, minerality reminiscent of peat and shellfish, intense...
