Some wines deserve to be called "unicorns," and Spira Solera from the Ligas Estate is certainly one of them—truly unique and rare. Here, the red Xinomavro is approached in a different way. It is vinified as if it were white, aged in a solera system of mother barrels since 2012, and matures under the influence of flor. The wine possesses astonishing complexity, nuance, and intensity. Like an old musical instrument where every note evokes different emotions and tones, yet never ceases to surprise you. The color is on the verge of light copper, and the nose offers a fantastic sequence of oxidative aromas, peel, ripe stone fruits, and salty minerality. On the palate, a sense of depth and subtle contrasts unfolds, where freshness meets maturity and the complexity is unparalleled. A wine with an indelible character, typical of natural winemaking.
Spira Solera is produced exclusively from Xinomavro grapes grown in organic vineyards in Pella at an altitude of 100 meters. The harvest is done by hand, and the must is separated from the skins in a blanc de noir vinification process in stainless steel tanks. The juice is transferred to 400L oak barrels to complete fermentation and is then added to the 600L solera system, where each new vintage is incorporated without disrupting the flor. The wine remains in these barrels for 12 months sous voile (under a layer of flor, as in Jura wines) and is bottled in limited quantities each year, unfiltered and without the addition of sulfur. Spira Solera is a unique example of natural winemaking with zero intervention and solera aging, perhaps the estate’s most extreme yet fascinating approach to the variety.
