The Assyrtiko Maison Viticole from the Ligas Estate is a bold, orange-style Assyrtiko made entirely through natural vinification, which remains in contact with the skins for two days. Cloudy, orange in color, multi-layered, aromatic, with distinctive aromas of citrus peel, caramel, herbs, and mineral notes alongside funkier, animal notes. Rich in texture, with a mild tannic structure and balanced acidity that carries the wine across the palate, giving it energy and length. One of the most characterful Assyrtikos wines, produced with absolutely zero intervention in the winemaking process and from old vineyards. Fantastic paired with baked goat cheese, walnuts, and beets.

Maison Viticole Asyrtiko is a natural orange wine made from 100% Asyrtiko grapes from the Ligas Estate, sourced from organic permaculture vineyards at an altitude of 100 meters, with limestone and clay soils. The grapes are harvested by hand, followed by destemming and maceration with the skins for about 2 days in a stainless steel tank. The must drains naturally, and fermentation takes place with indigenous yeasts at temperatures of 15–17°C. Aging takes place primarily in a stainless steel tank on the fine lees for about 6 months, while part of the batch may be aged in used oak barrels. The wine is bottled unfiltered, unclarified, and without the addition of sulfites.
