The wine ages for 6 years and 3 months in partially filled barrels without topping up (non ouillé), with the development of a voile that protects it and defines its oxidative character. Aging takes place 60% in warmer and drier conditions in the cellar and 40% in cooler and more humid conditions, allowing for a more controlled evolution and greater balance in the final result. Les Bruyères embodies a classic, archetypal Vin Jaune style. It is rich and structured, with intense aromas of nuts, spices, curry, and peat, with the concentration of the style, the characteristic saltiness, and the intense minerality in the long finish. This is a wine with great aging potential that can evolve for decades in the cellar.
