A small parcel of around 6 stremmas within the “Les Saucours” vineyard—its name meaning “the place where willows thrive”—offers an outstanding expression of Chardonnay from the renowned Chandon de Briailles. The site is ideal, with white calcareous marls providing excellent soil for the cultivation of this white variety, something clearly reflected in the bottle through its refined, mineral character and notes of white flowers. Located mid-slope, with an eastern exposure and benefiting from the cooling breezes coming from the plains of Savigny-lès-Beaune, Saucours is a prime site for white wines. Fermentation takes place in oak barrels and 600L oak demi-muids, followed by approximately 18 months of aging in the same vessels. A beautiful nose—linear and mineral as expected—paired with a buttery and nutty dimension on the palate that balances the wine’s crisp acidity.

Without the depth of Ile de Vergelesses but with an ethereal, elegant, and mineral profile, Les Saucours Savigny-lès-Beaune is another excellent white from Chandon de Briailles. It is fermented with wild yeasts, with no interventions, and the fruit comes from biodynamically farmed vineyards, while sulfur additions are kept to a minimum. An extremely interesting and great value-for-money Chardonnay from the heart of the Côte d’Or—precise and complete, with remarkable freshness and energy alongside its breadth and texture on the palate. It pairs beautifully with a creamy mushroom risotto, elevating the tasting experience.
