One of the classic, historical styles of wine in Tuscany, the Italian Vin Santo is mostly produced by blends of Malvasia and Trebbiano di Toscana which are left to dry on the attics of the wineries according to the appassimento Italian method. Isole e Olena’s Vin Santo ferments traditionally in small oak (caratelli) which carried Vin Santo wines before hands, having developed yeast population that helps ferment the wine. It ages for eight years developing amazing levels of complexity and superb balance between sweetness and acidity. The holy wine of Tuscany always accompanies the traditional almond biscuits of Tuscany (cantucci) being an indispensable part of the gastronomic culture of this amazing area of Italy.
Deep amber in color, with a rich combination of aromas like dried fruits, orange peel, apricot compost and sweet bread. Long ageing has bestowed a beautiful noble oxidation that reminds of caramel, toffee, crème brulee and nuts, while spicy aromas like vanilla, cinnamon stick and clove fill the glass. Delightful and magnificently sweet, without losing the necessary acidity that refreshes the palate and ultimately leaves a sense of freshness. The finish is monumental in length with the persistence of the nutty aromas being so strong it makes one be reluctant to move on to the next sip.
An awesome balance of freshness and oxidative character, a hint of honey aromas and richness reminiscent of the equally wonderful sparkling wines from the Chenin Blanc variety.
