From the rare Limniona to the almost forgotten Zalovitiko, Edenia Fuxia highlights two varieties with completely different histories. The former is steadily gaining ground as one of the most exciting varieties in the vineyards of Thessaly, while the latter remains an enigma to most. However, Ioanna Tsili and her father Makis dare to "rewrite" their rosé, replacing Syrah in the blend with the indigenous Zalovito, creating a unique wine. The result brings aromas of framboise, cherry, and violet, framed by hints of mint and herbs. On the palate, the wine has volume and flavor intensity, but also the freshness that makes a rosé truly enjoyable. A wine that balances authenticity and originality, giving voice and "face" to a variety that until recently was lost. That alone is reason enough to pour it into your glass.

Edenia Fuxia comes from 70% Limniona and 30% Zalovitiko grapes, grown in Kalogries, at an altitude of 320–340 meters and a slope of 13%. The two varieties are blended after 4 hours of pre-fermentation maceration before pressing. Fermentation is spontaneous, with indigenous yeasts, 90% in stainless steel tanks and 10% in second-use French barrels. After completion, the wine remains in contact with the fine lees for 6 months, acquiring complexity and texture, and is bottled with minimal sulphur and gentle filtration. In the glass, Edenia Fuxia is exuberant yet lively, with refreshing acidity, soft tannins, and a persistent, fruity finish that makes it a delight to drink.
