The boutique winery Tsililis Terres was born from the vision of Ioanna Tsilili, who, drawing on her many years of experience and deep scientific training, chose Meteora as the place to create wines and spirits with minimal intervention and respect for nature. Her goal is to highlight the unique character of the local terroir and breathe new life into indigenous varieties—from the well-known and up-and-coming to the rare and almost forgotten, such as the local Zalovitiko.
The dry vineyard stretches across poor, schistose soils on the slopes around the impressive backdrop of the Meteora rocks and next to the prehistoric cave of Theopetra. It is certified 100% organic, with ever-increasing regenerative viticulture practices. The cool northwesterly currents descending from the surrounding mountains ensure a natural balance in the vineyard, while low yields per acre—often less than 500 kg per acre for varieties such as Limniona—give rare concentration and depth of flavor.
The same philosophy continues in the winery: spontaneous fermentation, minimal intervention, and low levels of sulfur, thanks to the excellent health of the raw material. Alongside Ioanna's favorite varieties—Limniona, Xinomavro, Assyrtiko, Malagouzia—the revival of the rare Zalovitiko stands out, which is also mentioned in the local catalogs of the PGI Meteora, confirming its historical connection with the region. A revival that connects the past with the present, creating wines with identity, authenticity, and uniqueness.
