In Jura, where Savagnin is considered indigenous, Chardonnay seems at first glance to be a "visitor" from Burgundy. However, it is the most widely planted variety in the region and has been present for centuries. At Les Graviers, Stéphane Tissot brings out all the greatness of Chardonnay in the Bajocian limestone terroir of Jura. Six different vineyards, with an average age of fifty years, spread across the characteristic limestone soils, give the wine a beautiful balance, smoky notes, salty minerality, and lovely freshness despite its high alcohol content. Limestone always gives wines intensity and minerality with a salty dimension. A great Chardonnay that stands alongside—if not above—many Burgundies.

Les Graviers comes from six different vineyards covering a total area of 2.8 hectares, all organically farmed since 1999 and biodynamically since 2004, certified by Ecocert and Biodyvin. The harvest is manual, the grapes are pressed whole with a pneumatic press, fermentation is indigenous, and aging lasts 24 months in 228-liter barrels, 15% of which are new. The wine is bottled with light filtration and very low total sulphur. In the glass, it expresses the classic intensity and minerality that limestone soil imparts, with salty notes, beautiful concentration, balance between freshness and alcohol, and subtle hints of smoke and toasted bread. A great Chardonnay from Jura, with an aging potential that can exceed 20 years.
