In the amphorae of Stephane Tissot's cellar, Savagnin en Amphore comes to life as an orange wine that breaks away from the classic Jura standards, free from the oxidative influences of Vin Jaune. Extraction in amphorae adds depth, tannins that give structure, and spicy aromas, bringing mandarin peel, peach, apricot, plum, and paprika, while the tannic bite is reminiscent of red wine. On the palate, the cool acidity supports the structure and aromas, while the salty minerality makes the aftertaste long and enjoyable. This is a provocative wine, radical for such a conservative region, full of personality, inviting you to pair it with dishes that highlight its structure, such as roasted white meats with Asian spices or intensely spicy cheeses.

Savagnin en Amphore comes from 30-year-old vineyards on clay soils in the Arbois region. It is fermented in 420L amphorae for 5 months without sulphites and with manual racking. After pressing, the wine is aged for 3 months in refilled barrels and bottled without filtration and without sulfites, in keeping with Tissot's preferred practice of minimal intervention. The result is a wine with depth, rich tannins, and spicy aromas: peach, apricot, plum, paprika, ginger, and white pepper. The lively acidity maintains the freshness, while the salty minerality and long finish make the wine an ideal companion to food. We would consider Indian chicken curry. One of Stephane's wonderful "experiments" and a provocatively interesting orange wine for the palate.
