Tissot Pinot Noir "Sous la Tour"

If Burgundy is the first place that comes to mind when you think of top Pinot Noir, then Stéphane Tissot’s Sous la Tour from Jura will open up new paths for you. As its name suggests, it comes from a limestone vineyard located beneath the tower in the commune of Arbois, combining elegance and precision with deep fruit expression and finely structured tannins. The gentle, natural vinification with whole clusters brings out earthy notes, finesse, freshness, and expressive red fruit, along with floral and spicy nuances — creating a Pinot Noir that is vibrant, complex, and utterly enjoyable, much like the finest examples of the variety from around the world.

More info

Sous la Tour comes from a limestone vineyard with a west and southwest exposure. Careful hand sorting and a long fermentation with whole clusters and native yeasts in wooden conical vats for 4 weeks highlight red fruit notes, earthy tones, and subtle mineral nuances. The wine is aged for 24 months in barrels (with a small proportion of new oak), with minimal sulfites added after malolactic fermentation, and bottled unfiltered. On the palate, it shows an elegant, lively structure, with fine yet firm tannins and a fresh, fruity character. Excellent alongside refined dishes with rich elements, it can also age for up to 15 years in the bottle, developing earthy, mushroomy, and complex notes.
