Vin Jaune, the famous yellow wines of Jura, are unique and inexhaustible in their complexity – perhaps reminiscent of the intensity and distinctiveness of a top cheese such as Roquefort. En Spois comes from a vineyard on clayey Triassic soils, with eastern exposure. Its 6 years and 3 months of ageing in barrels without racking, under a thin layer of yeast, creates a powerful but balanced character, with notes of dried fruit, freshly baked bread, spices and hints of a peaty aroma. Creamy, rich and full-bodied, it offers a long, salty and nutty aftertaste – a masterpiece for those seeking the tradition of Jura.

En Spois is one of the single-vineyard Vin Jaune wines produced by Tissot and comes from Savagnin grapes grown on clay soils from the Triassic period with eastern exposure. Fermentation occurs spontaneously with indigenous yeasts, and the wine is aged for 6 years in old barrels without filling in an oxidative manner. Aging takes place in 60% warmer and dry cellars and 40% cool and humid cellars, ensuring complexity and balance. The nose reveals walnut, hazelnut, spices, peaty notes, and thyme honey. On the palate, the wine is full-bodied, creamy, with a dry and salty aftertaste that lingers, while the clavelin bottle in which it is bottled reflects the percentage of wine that remains after evaporation in the barrel over the years (approximately 38% loss). An exceptional Vin Jaune with a strong character and great aging potential.
